A Healthy Mandarin Chow Mein Recipe

Quick-cooking Oriental noodles

4 Cloves

Garlic, minced

1/4 Teaspoon

Red chili powder

1/2 Pound

Boneless pork loin or sirloin, cut into thin strips

3 Cups

Cabbage, thinly sliced

1 Can (8 oz)

Bamboo shoots, drained, sliced and rinsed

1/2 Cup

Carrots, coarsely shredded

2 Medium

Green onions, cut into 2 inch pieces

2 Tablespoons

Soy sauce

4 Teaspoons

Catsup

1 Tablespoon

Worcestershire sauce

1 Teaspoon

Sugar

1/2 Teaspoon

Sesame oil

Vegetable cooking spray

  1. Cook noodles in 4 cups boiling water for 3 minutes or just until tender, omitting flavour packet if present. Drain and rinse noodles, set aside.
  2. In a small bowl combine soy sauce, catsup, Worcestershire sauce, sugar, and sesame oil. Set aside.
  3. Spray a wok or large skillet with nonstick spray. Heat and add garlic and red pepper, cook over medium-high heat for 10 seconds. Add pork, stir-fry 1 minute. Add cabbage, bamboo shoots, carrot, and onions. Stir-fry 2 to 3 minutes or until onions are just crisp-tender and pork is no longer pink.
  4. Add noodles and sauce, heat through, about 1 minute, stirring gently to coat.
