A Good Tamale Pie Recipe

2 Pounds

Lean ground beef

2 Cups

Green and red peppers, seeded and chopped

1 Medium

Onion, chopped

1 Can (11 oz)

Condensed nacho cheese soup. (If unavailable use any creamy soup).

1 Cup

Olives, sliced, pitted and drained

3/4 Cup

Mild chunky salsa

1/4 Cup

Water

2 8-oz pkg

Corn muffin mix

3/4 Cup

Shredded cheese

  1. In a large skillet cook ground beef, peppers, and onion until meat is brown. Drain off fat.
  2. Stir in soup, sliced olives, salsa and water. Bring to boil, reduce heat and simmer for 5 minutes. Remove from heat.
  3. Prepare corn muffin mix according to package directions. Spread half of the muffin batter into a greased 13x9x2 inch baking dish. Spoon the hot meat mixture over the muffin layer. Carefully spread the remaining corn muffin batter over the meat mixture.
  4. Bake in a 350?F oven for 30 minutes or until muffin layer is golden. Top with cheese and tomatoes. Cut into squares.
