Is Apple Cake Healthy?

Brown Sugar

1/4 Cup

Vegetable oil

Egg whites

3/4 Cup

All-purpose flour

3/4 Cup

Whole wheat flour

1/2 Cup

Oat bran

3 Cups

Apples, unpeeled, shredded

1 1/2 Teaspoons

Baking soda

1 Teaspoon

Ground cinnamon

1/4 Teaspoon

Allspice or nutmeg

Vegetable cooking spray

  1. Spray a 13x9x2 inch baking pan with nonstick coating.
  2. In a large mixing bowl combine sugar, oil and egg whites. Beat with a wooden spoon until well blended.
  3. Add flours, oat bran, baking soda, cinnamon, and allspice. Stir until moistened, then stir in shredded apples.
  4. Pour batter into prepared pan. Bake in 350F oven for 25 to 30 minutes. Cool. If desired sift powdered sugar atop cake.
