Nutritional Information For Almond Cookies

Servings: Makes 12 cookies
Nutrition information per serving (two cookies):

1 1/4 Cups

All-purpose flour

1/4 Teaspoon

Baking soda

1/4 Teaspoon

Salt

7 Tablespoons

Margarine, reduced-calorie

5 Tablespoons

Sugar

1 Large

Egg

1 Teaspoon

Almond extract

1 1/2 Tablespoons

Almonds, finely ground

1 Tablespoon

Almonds, sliced

Nonstick cooking spray

  1. Preheat oven to 350F. Spray 2 baking sheets with nonstick cooking spray, set aside.
  2. In a small bowl, combine flour, baking soda and salt. In a medium bowl, with electric mixer, at medium speed, beat margarine and sugar until light and fluffy. Beat in egg and almond extract.
  3. Gradually add dry ingredients to bowl, mix until blended. With spatula, gently fold in ground almonds. Drop mixture by tablespoonfuls, 1 inch apart, onto prepared baking sheets, making 24 cookies. Press sliced almonds gently onto each cookie.
  4. Bake until puffed and golden, 10 to 12 minutes. Cool 5 minutes on baking sheets, then remove to rack to cool completely.
