Popped microwave popcorn

1/2 Cup

Water

8 Tablespoons

Hot cocoa mix

1/4 Cup

Smooth peanut butter

1 1/2 Tablespoons

Margarine, reduced-calorie, melted

1/2 Teaspoon

Vanilla extract

1 1/2 Cups

Nondairy whipped topping

1 Medium

Banana, sliced

Strawberries to garnish (optional)

  1. Line an 8x4 inch loaf pan with plastic wrap to extend over sides and ends. Spray with nonstick cooking spray.
  2. Place all but ? cup popcorn in large bag. With fingers, slightly crush popcorn in bag. Tip popcorn out of bag into prepared pan. Press popcorn over bottom and up sides of the prepared pan.
  3. In a medium bowl, with wire whisk, combine water, cocoa mix, peanut butter, margarine and vanilla. Whisk until smooth. Stir in banana.
  4. Spoon into prepared pan. Cover with plastic wrap. Freeze overnight. To serve, lift loaf from pan, using plastic wrap. Unwrap loaf and place on serving plate. Use reserved popcorn and pat evenly onto uncoated sides. Cut loaf into 8 even slices. Garnish with strawberries.
