Whole Wheat Cornmeal Muffins

Yellow cornmeal, degerminated

2/3 cup

Whole-wheat flour

2/3 cup

Sugar

1 tablespoon

Baking powder

2 teaspoons

Salt

Pinch of

Skim milk

2/3 cup

Egg, beaten

  1. Preheat oven to 400F (hot).
  2. Grease 8 muffin tins or use paper liners.
  3. Mix dry ingredients thoroughly.
    4. Mix milk, egg, and oil. Add to dry ingredients, stir until dry ingredients are barely moistened. Batter will be lumpy.
  4. Fill muffin tins 2/3 full.
  5. Bake until lightly browned-about 20 min.
