Pesto Dressing Recipe

1/2 Cup

Part-skim ricotta cheese

2 Tablespoons

Parmesan cheese, grated

1 Medium

Shallot, quartered

1/4 Cup

Fresh basil, chopped

1/4 Cup

Fresh parsley, chopped

2 Tablespoons

Pine nuts, toasted

2 Tablespoons

Olive oil

Dash

White pepper

Juice of

1/2 lemon

  1. Combine all ingredients in container of an electric blender, cover and process until smooth.
  2. Pour into a suitable container, cover and chill.
  3. Serve with pasta or spinach salad or with any other dish as an Italian topping.
