Is Baked Haddock In Tomato Sauce Healthy?

Onions, sliced

2 Medium

Tomatoes, sliced

1 Pound

Haddock filets

2 Tablespoons

Lemon juice

1/4 Teaspoon

Salt

Dash of

Pepper and paprika

1/2 Cup

Tomato juice

3/4 Cup

Green pepper, diced, sauteed

1 Cup

Mushrooms, sliced, sauteed

1 Tablespoon

Parsley, chopped

  1. Preheat oven to 350F. Arrange the onions and tomatoes in the bottom of a large greased baking dish. Arrange the filets over the vegetables. Season with lemon juice, salt, pepper, and paprika.
  2. Combine the tomato juice, green pepper, and mushrooms, and pour over the fish. Bake 30 to 35 minutes, until fish is flaky. Sprinkle with parsley before serving.
