Yellow cornmeal

All-purpose flour

  1. To prepare sauce, in a small bowl, combine mint, scallion, ginger root, sugar, chili pepper and salt. Stir in yogurt, oil, and lemon juice, cover and refrigerate at least 1 hour.
  2. On wax paper, combine cornmeal, flour and paprika. Press fillets evenly into the mixture to coat both sides.
  3. In a large nonstick skillet, melt margarine over medium-high heat. Add fillets, cook 2-3 minutes on each side, or until golden and fish flakes easily when tested with fork.
  4. Serve with chili mint sauce, and if desired Chardonnay wine.
