What's In Chicken Pitas?

Chicken breast halves, skinned

1 Cup

Water

1 1/2 Tablespoons

Reduced calorie mayonnaise

1 Teaspoon

Balsamic vinegar

Sun-dried tomato halves, diced

1/2 Cup

Red pepper, chopped

1/2 Cup

Cucumber, pared, chopped

1/4 Cup

Chopped scallion

Pita halves

  1. Remove skin and bones from chicken, cook in a small saucepan of boiling water, 5 minutes, or until chicken is white and not pink. Remove from heat and discard water. Cut chicken into 1 inch cubes.
  2. In a medium bowl, combine mayonnaise, sun-dried tomatoes, red pepper, cucumber, scallion, and vinegar. Add chicken and mix well.
  3. Microwave pita halves on high for 30 seconds. Fill pita halves with chicken salad, enjoy.
