How Much Sodium Is In Chicken Taco Rice?

Nutrition information per serving:

1 Pound

Boneless chicken breasts, cut into strips

1 1/2 Cups

Long grain rice

1 Cup

Water

1 Cup

Sweet corn, thawed and drained

1 Can (8 oz)

Tomato sauce

1 Medium

Red pepper, cut into small strips

1/4 Cup

(1 oz)Cheddar cheese, shredded

1 Package

Taco seasoning mix (if unavailable use any spicy seasoning)

1 1/2 Tablespoons

Vegetable oil

  1. Follow package directions for rice, but reduce cooking time by a few minutes and leave rice slightly uncooked.
  2. Cook and stir chicken in hot oil until lightly browned. Add water, tomato sauce and seasoning mix. Bring to a boil, reduce heat, cover and simmer 5 minutes.
  3. Add corn, red pepper and rice. Bring to a boil, cover and remove from heat. Let stand for 5 minutes.
  4. Fluff with fork, sprinkle with cheese and serve with taco or tortilla chips.
