Chickpeas, canned or cooked, drained

4 Cups

Spinach, raw, packed

Tablespoon

Safflower oil

1/4 Cup

Slivered almonds

1/4 Cup

Walnuts, chopped

1/2 Teaspoon

Salt

3 Ounces

Cheddar cheese, grated

2 Tablespoons

Parmesan cheese, grated

  1. In a saucepan heat the oil, almonds, walnuts, salt, and Monterey Jack cheese. Cook over medium heat until the cheese is melted. Add a little water for desired consistency.
  2. Mix the chickpeas and spinach together, and pour the crunch sauce over it. Sprinkle with the Parmesan cheese.
