A Healthy Recipe For Couscous Salad

2 Cups

Water

1 Tablespoon

Instant chicken stock granules

10 Ounce pkg.

Couscous

1 Large

Carrot, shredded

1 Large

Green pepper, cut into ?-inch squares

1 Large

Zucchini, halved lengthwise, and sliced

1 Large

Yellow summer squash, halved lengthwise, & sliced

1 Cup

Cherry tomatoes, halved

1 Cup

Italian salad dressing

  1. In a medium saucepan mix water and bouillon granules, bring to a boil. Add couscous. Remove from heat, cover and let stand for 5 minutes or until liquid has been absorbed.
  2. Transfer to a container, add carrot, green pepper, zucchini, yellow summer squash, and cherry tomatoes, mix well. Add salad dressing and toss to coat.
  3. Cover and chill for 6 to 24 hours before serving.
