What's In A Creole Okra Salad?

Servings: Makes 6 side-dish servings

1/2 Pound

Okra, small fresh

3 Medium

Tomatoes, cut into eighths

1 Medium

Onion, thinly sliced and separated into rings

1 Can (6 oz)

Vegetable juice cocktail (no-salt-added)

1/4 Cup

White wine vinegar

1 Tablespoon

Fresh thyme, minced

1 Tablespoon

Fresh basil, minced

1/4 Teaspoon

Garlic powder

1/4 Teaspoon

Salt

1/2 Teaspoon

White, black and red pepper (a pinch of each)

  1. Wash okra and trim stems. Place okra in a vegetable steamer over boiling water, cover and steam 8 minutes or until tender.
  2. Combine okra, tomatoes and onion in a large shallow dish, set aside.
  3. Combine vegetable juice and other ingredients in a saucepan and bring to a boil over medium-high heat. Reduce heat and simmer, uncovered, 10 minutes.
  4. Pour over vegetable, toss to coat. Cover and refrigerate 8 hours or overnight, stirring occasionally. Toss gently and serve using a slotted spoon.
