1 Cup | Pesto dressing (See dressings and sauces for recipe) |
1/3 Pound | Linguini pasta |
8 Large | Shrimp, fresh, shelled and deveined |
1 Medium | Green pepper, cored, seeded, and chopped |
1 Medium | Red bell pepper, cored, seeded, and chopped |
1 Tablespoon | Olive oil |
Juice of | 1/2 lemon |
- Cook linguini until al dente. Drain in a colander and rinse with cold water. Chill in a large bowl. Add pesto, peppers and lemon juice and toss. Transfer to serving plates.
- Rub shrimp lightly with olive oil. Grill or broil until pink, about 3 to 5 minutes. Top pasta servings with shrimp.
