Tasty Shrimp Salad

1 Cup

Pesto dressing (See dressings and sauces for recipe)

1/3 Pound

Linguini pasta

8 Large

Shrimp, fresh, shelled and deveined

1 Medium

Green pepper, cored, seeded, and chopped

1 Medium

Red bell pepper, cored, seeded, and chopped

1 Tablespoon

Olive oil

Juice of

1/2 lemon

  1. Cook linguini until al dente. Drain in a colander and rinse with cold water. Chill in a large bowl. Add pesto, peppers and lemon juice and toss. Transfer to serving plates.
  2. Rub shrimp lightly with olive oil. Grill or broil until pink, about 3 to 5 minutes. Top pasta servings with shrimp.
