Recipe For Stuffed Mushrooms

1 Teaspoon

Margarine

1 Ounce

Walnuts, finely chopped

3 Tablespoons

Onion, finely chopped

1 Clove

Garlic, finely chopped

1 Tablespoon

Dry sherry

1/4 Teaspoon

Marjoram

1/4 Teaspoon

Salt

Pinch of

Black pepper

1/4 Cup

Breadcrumbs, whole-wheat

1/2 Teaspoon

Paprika

1/2 Cup

Fresh parsley, chopped

  1. Preheat oven to 375F. Remove stems from mushrooms and chop finely. Reserve caps.
  2. In a nonstick skillet melt margarine and add chopped mushroom stems, walnuts, onions, and garlic, and saut? until onion is tender. Add sherry and simmer uncovered until most of the liquid has evaporated, about 1 minute. remove from heat and add marjoram, salt, pepper, and breadcrumbs.
  3. Fill mushroom caps with mixture and arrange in a shallow baking dish. Bake in preheated oven for about 15 minutes. Sprinkle tops with paprika and parsley before serving.
