3 Cups | Cooked rice, cold |
1 Can (15 oz) | Pinto beans, drained, rinsed |
1 Can (15oz) | Black beans, drained, rinsed |
1 Cup | Frozen peas, thawed |
1 Cup | Celery, sliced |
1 Medium | Red onion, chopped |
1/2 Cup | Green chili peppers, drained, diced |
1/4 Cup | Cilantro or parsley, snipped |
3/4 Cup |
- In a large bowl, combine cooked rice, pinto beans, black beans, peas, celery, onion, chili and the cilantro or parsley.
- Add the dressing to the mixture, toss gently to mix. Cover and chill for a few hours.
- To serve, transfer the chilled salad to a serving bowl.
