How To Make A Good Two - Bean And Rice Salad

3 Cups

Cooked rice, cold

1 Can (15 oz)

Pinto beans, drained, rinsed

1 Can (15oz)

Black beans, drained, rinsed

1 Cup

Frozen peas, thawed

1 Cup

Celery, sliced

1 Medium

Red onion, chopped

1/2 Cup

Green chili peppers, drained, diced

1/4 Cup

Cilantro or parsley, snipped

3/4 Cup

Italian salad dressing

  1. In a large bowl, combine cooked rice, pinto beans, black beans, peas, celery, onion, chili and the cilantro or parsley.
  2. Add the dressing to the mixture, toss gently to mix. Cover and chill for a few hours.
  3. To serve, transfer the chilled salad to a serving bowl.
