A Healthy Recipe For Wild Rice Salad

Wild rice

2 1/2 Cups

Water

2 Teaspoons

Reduced-calorie margarine

1 Cup

Fresh mushrooms, quartered

1 Cup

Celery, sliced

1/4 Teaspoon

Salt

1/4 Cup

Cider vinegar

1 Teaspoon

Sugar

1 Teaspoon

Dijon mustard

2 1/4 Tablespoons

Olive oil

2 Small

Apples, cored and coarsely chopped

1/2 Cup

Blue cheese, crumbled

  1. Rinse and drain wild rice. In a medium saucepan, bring water to a boil, stir in rice, reduce heat to simmer. Cover and cook 45 minutes, or until rice is tender and all the water has been absorbed.
  2. In a medium skillet, melt margarine. Add mushrooms, celery and salt, cook, stirring frequently, 3 minutes, or until celery is tender-crisp.
  3. In a large bowl, whisk vinegar, sugar, and mustard. Slowly add oil, whisking until blended. Stir in wild rice, toss to mix well. Refrigerate until cool. Add apples, vegetables, and blue cheese, mix well. Refrigerate at least 1 hour before serving.
