A Tasty Recipe For Creamy Corn Soup With Red Pepper Relish

RELISH:

1 Cup

Red pepper, finely chopped

1/2 Cup

Zucchini, finely chopped

1/4 Cup

Fresh parsley, chopped

1 Tablespoon

Fresh lime juice

1/4 Teaspoon

SOUP:

1/2 Cup

Onion, chopped

2 Teaspoons

Olive oil

2 Cups

Corn kernels, frozen

1/2 Cup

Chicken broth, low-sodium

1/2 Cup

Evaporated skimmed milk

2 Teaspoons

Fresh coriander, chopped

1/4 Teaspoon

Black pepper, freshly ground

  1. In a small bowl combine all relish ingredients, mix well and set aside so flavours can blend.
  2. In a medium sized casserole, combine onion and oil. Microwave on high 1 minute, or until onion is tender. Stir in corn and chicken broth. Microwave on high 4 minutes, stirring once.
  3. Add milk, coriander, and pepper, stir well. Microwave on high until heated through, 1 to 2 minutes.
  4. Pour soup into food processor, process until smooth. To serve, ladle soup evenly into bowls, top evenly with red pepper relish.
