Healthy Mediterranean Fish Soup

Vegetable oil

1 Small

Green pepper, seeded and chopped

1 Medium

Onion, chopped

1 Clove

Garlic, finely chopped

2 Cups

Water

1 Can

Stewed tomatoes, undrained

2 Medium

Carrots, pared & sliced

1 Tablespoon

Chicken-flavour instant stock granules or cubes

Bay leaf

1 Tablespoon

Dried oregano leaves

1/4 Teaspoon

Ground pepper

1 Pound

Fresh or thawed frozen fish fillets, cut into large chunks

Mushrooms, sliced, drained

  1. Put oil in large saucepan over medium-high heat. Add bell pepper, onions and garlic; cook 4 minutes or tender, stirring often.
  2. Add remaining ingredients, except fish and mushrooms; bring to a boil. Reduce heat to medium-low; cover and simmer 30 minutes, or until carrots are tender.
  3. Stir in fish and mushrooms. Cover and simmer 5 minutes longer, or until fish flakes when touched with a fork. Remove bay leaf.
