How Healthy Is Moroccan Carrot Soup?

3 Tablespoons

Vegetable oil

1 Small

Onion, chopped

1 Clove

Garlic, finely chopped

1 Pound

Carrots, pared and sliced

3 Cups

Water

1 Tablespoon

Chicken-flavour instant stock granules or cubes

1/2 Teaspoon

Ground cumin

1/4 Teaspoon

Ground cinnamon

Pinch of

Black pepper

2 Cups

Skim milk

  1. Put oil in large saucepan; place over medium-high heat. Add onion and garlic; cook about 4 minutes, or until tender, stirring often. Add remaining ingredients except milk, bring to a boil. Reduce heat to low, cover and simmer until carrots are tender, about 30 minutes.
  2. In a blender, pur?e about half the carrot mixture until smooth. Return carrot pur?e to saucepan, add milk. Place of medium-high heat and heat through; do not boil.
  3. Ladle hot soup into bowls. Garnish as desired, and serve.
