A Good Mussel Soup Recipe

2 Teaspoons

Garlic, chopped

1/2 Cup

Sunflower oil

1 Tablespoon

Fresh parsley, coarsely chopped

1 1/2 Cups

Plum tomatoes, cut-up

1 Small

Red chili pepper, chopped

2 Pounds

Fresh mussels, "beards" cut off, scrubbed and cleaned thoroughly

1/2 Cup

Dry white wine

  1. In a large saucepan, saut? garlic in the oil over medium heat until lightly coloured. Add the parsley, tomatoes and chili pepper. Stir a few times and simmer uncovered about 20 minutes.
  2. Add the mussels and wine, cover, raise heat to high and cook until the mussels open, about 3 to 5 minutes. To help the mussels cook evenly, grasp the pot with both hands, holding the cover down tightly, and shake it 2 or 3 times while cooking. If necessary reduce heat and simmer, uncovered, 3 to 4 additional minutes to thicken sauce. Serve immediately.
