How To Make Garden Fresh Pasta With Tomato - Basil Sauce

Thin spaghetti or linguini

4 Cups

Tomatoes, chopped

1 Can (15 oz)

Italian-flavour tomato sauce

1 Pound

Asparagus, cut into 1-inch pieces

1

Zucchini, halved and sliced

1 Large

Red pepper, seeded and cut into ?-inch chunks

1 Teaspoon

Dried basil, or 2 tablespoons chopped fresh basil

1/2 Teaspoon

Freshly ground pepper

1 Tablespoon

Vegetable oil

Freshly grated Parmesan cheese

  1. Prepare pasta according to package directions, drain and transfer to bowl.
  2. In large saucepan over high heat, combine tomatoes, tomato sauce, basil and ground pepper; mix well and bring to the boil. Reduce heat and allow to simmer, stirring occasionally, until slightly thickened, about 30 minutes.
  3. In large skillet, heat oil over medium-high heat. Add asparagus, zucchini and bell pepper. Stir-fry until vegetables are tender, about 3 minutes.
  4. To serve, combine pasta with vegetable mixture, toss well. Spoon tomato sauce on top and sprinkle with Parmesan.
