CRUST

Whole milk, scalded

Whole wheat flour

SAUCE:

1/4 Cup

Onion, chopped

2 Cloves

Garlic, chopped

2 Teaspoons

Olive oil

3/4 Cup

Tomato paste

1 Cup

Tomatoes, canned

Dash of

Black pepper

1 1/2 Teaspoons

Oregano, crushed

1/4 Teaspoon

Basil, crushed

1/4 Teaspoon

Thyme, crushed

1/4 Teaspoon

Marjoram, crushed

1/4 Teaspoon

Cayenne

2 Tablespoons

Parsley, chopped

TOPPING:

1 Cup

Mushrooms, sliced

1/2 Cup

Red and green peppers, sliced

Black olives, pitted, halved

1 Cup

Mozzarella cheese, shredded

1/4 Cup

Parmesan cheese, grated

  1. Soften the yeast in the warm water. In a separate bowl combine the margarine, salt, and milk. Cool to lukewarm.
  2. Stir in the yeast. Gradually add the flour until the dough is stiff. Knead 5 minutes. Cover and let rise in a warm place to twice its original size.
  3. Saut? the onion and garlic in the oil, add the remaining ingredients, cook approximately 30 minutes. Stir occasionally. Set aside.
  4. Preheat oven to 425F. Grease a 12 inch pizza pan. Roll out the dough, place it in the pan, brush it with some oil and prick with a fork. Bake 3 to 5 minutes. Spread the sauce on the dough, then add the mushrooms and peppers. Return the pizza to the oven and bake 6 minutes. Top with the cheeses and olives and bake until they are melted.
