How Do I Make Tofu Pizza?

All-purpose flour

Whole-wheat flour

Corn bran

Active dry yeast

Brown sugar

1/2 Cup

Tomato sauce, low-sodium

1/4 Teaspoon

Dried basil

1/2 Teaspoon

Dried oregano

1 Medium

Green pepper, cut into strips

1 Medium

Onion, cut into rings

1 Cup

Tomato, chopped

6 Large

Black olives, pitted and sliced

1 1/2 Cups

Tofu, drained and crumbled

1/2 Cup

Mozzarella cheese, part-skim, shredded

Vegetable cooking spray

  1. To prepare dough, in a food processor, combine flours, corn bran, yeast, sugar and salt. With machine running add olive oil and water in a steady stream. When the dough gathers in a ball, pulse 20 times to knead.
  2. Spray medium bowl with nonstick cooking spray. Place dough in the bowl, turn to coat all surfaces. Cover and let rise in warm, draft free place until doubled in volume, about 45 minutes.
  3. Preheat oven to 425F. Spray 12 inch pizza pan with nonstick cooking spray. Punch down dough and place in centre of prepared pan. Press into a 12 inch circle covering pan.
  4. In a small bowl, combine tomato sauce, basil and oregano, spread over dough to within ? inch of edge. Sprinkle with tomato, onion, green pepper and olives. Top evenly with crumbled tofu and mozzarella cheese.
  5. Bake about 20 minutes, or until crust is browned and crisp. Let stand 5 minutes before serving.
