Dijon mustard

Poppy seeds

1/2 Teaspoon

Honey

1/2 Medium

Diced green pepper

1/2 Small

Onion, thinly sliced

1/2 Cup

Alfalfa sprouts

2 Slices

Pumpernickel bread

1 Medium

Tomato, thinly sliced

1/2 Medium

Avocado, thinly sliced

2 Teaspoons

Lemon juice

1/2 Teaspoon

Dried mixed herbs

2 Ounces

Cheese, thinly sliced

  1. To prepare dressing, in a small bowl, combine mustard, 1 teaspoon water, poppy seeds and honey, set aside.
  2. Divide green pepper and sprouts evenly over bread, drizzle each with 1 teaspoon of the dressing. Arrange the avocado evenly over sprouts, cover with the onion and tomato slices. Sprinkle with lemon juice and remaining dressing. Top with cheese and mixed herbs.
  3. Place bread on a paper towel in microwave. Microwave on high 2 minutes, or until cheese melts. Lift slices off paper towels and serve.
