Making A Good Zucchini Scramble

Zucchini, sliced

2 Tablespoons

Onion, chopped

1/2 Cup

Mushrooms, sliced

1 Tablespoon

Margarine

1 Tablespoon

Vegetable oil

1 Tablespoon

Whole wheat flour

1/2 Teaspoon

Salt

Dash of

Pepper

1/2 Cup

Milk, low fat

2 Tablespoons

Cheddar cheese, grated

1/2 Cup

Carrots, sliced, cooked

1/4 Teaspoon

Thyme, crushed

Tomatoes, cut in wedges

  1. In a medium skillet, saut? the zucchini, onion, and mushrooms in the oil.
  2. Melt the margarine in a saucepan over medium heat. Blend in the flour, salt, and pepper. Remove from the heat, gradually add the milk, stirring constantly to blend smoothly. Return to the heat, stirring until the sauce thickens. Add the cheese and blend.
  3. Stir the cheese sauce into the zucchini mixture. Add the remaining ingredients, heat through.
